To make the Greek dish “pastitsio” start by preparing the meat. Heat olive oil in a pan, add the lb of mince pork and cook for 5 minutes before adding the chopped onion. Cook for another 5 minutes. Add red wine, parsley, salt, pepper and a little tomato puree according to taste and leave for 10 minutes on low heat.
Boil the macaroni and drain before adding dry mint.
For the béchamel sauce, melt 1 cup butter in a saucepan and add 1 cup flower whisking into a soft paste. Then add a pint of warm milk and whisk continuously. Add 4 egg yolks and cinnamon.
Layer half the macaroni in an oven pan and place the mince meat on top. Add the rest of the macaroni and top with the béchamel sauce. Cook at 350 degrees for 45 minutes.
